Katherine “Kathy” E. Eckel (Neufeld), 62, passed away on Sunday, June 22nd, 2025 at JFK University Medical Center in Edison.

Born in Plainfield, Katherine was raised in Cranford and graduated from Cranford High School in 1980. She spent most of her later years residing in South Plainfield.

Katherine was a kind and loving soul. She would enjoy sitting outside and keeping an eye on the neighborhood and speaking to everyone that passed by. She was an avid decorator and took pride in having the “best dressed” house on the street. She would never forget a birthday or to send a holiday message. Katherine spent a few years as a crossing guard and greatly enjoyed talking to the families and children every day. Her daughter and grandson were her closest kin and she was beyond proud of both of their achievements. She loved her pets, Duke & Tom, and predeceased Cookie. She had a heart of gold, the biggest laugh in the room, and gave the tightest hugs. Katherine will be greatly missed and her daughter hopes that everyone will always remember the “Happy Kathy”.

Predeceased by her beloved husband, Peter J. Eckel, her partner Rich, and her parents Robert & Patricia, surviving is her daughter, Jessica Honeywell and partner Evens; grandson, Jordan; sister, Linda and two cousins, Carol and Robbie who affectionally always called her “Kicky”; stepsons, Justin and Jason Eckel, as well as numerous extended loving relatives and friends.

Cremation services were privately entrusted to the McCriskin – Gustafson Home For Funerals 2425 Plainfield Ave. South Plainfield, NJ 07080.

Katherine’s cremated remains will be placed to rest alongside her beloved husband Peter on July 18th, 2025 at 2pm, at Hillside Cemetery, Scotch Plains, NJ. Family and friends are welcome to attend this service to say a final farewell to Katherine.
